After the process of separating the curd from the whey, the liquid undergoes a micro-filtration process to extract unwanted fat and lactose (milk sugars). Depending on the duration of this process, the product either ends up as an isolate (the lowest fat and lactose levels) or as a concentrate (higher fat and lactose levels than isolate).
